The oldest Italian restaurant in Grand Junction might not be around were it not for the Business Incubator Center – and the determination and hard work of Chris and Krista Watson.
The Watsons own Ristorante Pantuso. They pride themselves on offering authentic Italian dishes. Chris is the head chef and Krista the general manager at the restaurant’s new location in the Redlands at 421 Brach Drive in the building that was for many years Dos Hombres.
Patrons can both see and taste Pantuso’s commitment to quality.
Diners are met at the door with the warm embrace of a classic trattoria. The couple takes routine trips to Italy to research the best ingredients and cooking methods, gaining menu inspiration that can be enjoyed on the western slope of Colorado. They import all their meats and cheeses. They offer a well-curated wine list.
They are carrying on the legacy of a restaurant that’s been feeding western Coloradans since 1958.
Krista, 40, is a Grand Valley native and has worked in hospitality since she was 15, mostly at the restaurant at Tiara Rado Golf Course. Chris comes from New Mexico. He is a graduate of the Scottsdale Culinary School and has run five kitchens during his career. Both worked for Pantusos before getting the opportunity to buy it.
Since purchasing the business in 2014, they have relied on the Small Business Development Center (SBDC) and the Business Incubator Center for operational assistance. Krista has attended several classes at the Incubator, including the LEADING EDGE class. “I learned so much in that class,” she said. “It was amazing. Then I met with Debbie, an SBDC coach. Debbie has worked with us for the last five years on best bookkeeping practices. Debbie has been vital to our success.”
In addition to their brick-and-mortar restaurant, Pantuso’s invested in a food truck, dubbed “Italian on wheels,” bringing authentic Italian street food to any event. Debbie once again was a key player in getting the food truck off the ground.
Every restaurant tells a story through its people and its food. Ristorante Pantuso is no exception. Chris and Krista are building on decades of tradition. Ristorante Pantuso long has been a gathering place where people can catch up over dinner, celebrate special occasions, or simply unwind after a long day. It is more than just a place to eat. It contributes to the vibrancy and spirit of the community. It connects generations of people through food.
